Leek Soup

As promised, here is my Leek Soup recipe. It's actually a recipe that my mom has had for YEARS and it's become a family tradition to have it for dinner on Christmas Eve. I'm sorry I didn't

* 2-3 leeks finely chopped
* ½ head of cabbage
* ¼ cup butter
* 2 large red potatoes
* 1 cup spaghetti noodles broken into pieces
* 2 ½ cups water (for thicker soup, use less water and more half & half)
* 1 quart half & half
* ½ pint whipping cream
* Salt, pepper, and garlic salt to taste
* Shredded Jack cheese
* Shredded sharp cheddar cheese

Wash and drain the leeks. Simmer them in butter for 10 minutes. Add cabbage and simmer for 10 more minutes.

Cook spaghetti and potatoes separately until soft.

Add 2 ½ cups of water to leek and cabbage mixture (you can use the potato water for this). Stir well. Add the half and half and whipping cream.

Drain the potatoes and spaghetti and add them to the leek/liquid. Add salt, pepper and garlic salt to taste and simmer for at least 20 minutes.

Top with grated cheese when serving.

A perfect recipe for a cold night! YUM!
