Impossibly Easy Taco Pie

I know I'm bombarding you with recipes lately, but I have a couple of friends who have been kind enough to let me borrow some cookbooks so I've been a cooking fool!

Last night Grandma and Grandpa came over for dinner and I made this taco pie. It was pretty easy, and super tasty! And again... The kids Big A gobbled it up and asked for seconds (and thirds, but he was denied).


* 1 pound ground turkey
* 1 medium onion, chopped (1/2 cup)
* 1 package (1 ounce) taco seasoning mix
* 1 can (4.5 ounces) chopped green chiles, drained
* 1 cup milk
* 2 eggs
* 1/2 cup Bisquick
* 3/4 cup shredded Monterey Jack or Cheddar cheese (3 ounces)
* 1 tomato cut into small pieces
* Sour cream and/or salsa, if desired


1. Heat oven to 400°F. Grease 9-inch pie plate. Cook ground turkey and onion in 10-inch skillet over medium high heat, stirring occasionally, until no pink remains. Stir in seasoning mix (dry). Spoon into pie plate; top with chilies.


2. Stir milk, eggs and Bisquick mix until blended. Pour into pie plate.


3. Bake about 25 minutes or until knife inserted in center comes out clean. Sprinkle with cheese and tomato and bake 3 to 5 minutes longer or until cheese is melted. Cool 5 minutes.



4. Serve with salsa and sour cream.

(I doubled the recipe to make two pies. I served 4 adults and 2 children and we went through a pie and a quarter and there is just enough left for B and the kids and I to have one more meal.)
